Using Knife in the Kitchen

To start with, here are some of the rules that you should keep in mind when you are in the process of using knives.

These rules are as follows:

  • There are quite a few varieties of knives that can be used when you are in a professional kitchen. It is important that you use the correct knife to perform the job each time to stay safe.

  • Make sure that there is a cutting board in place each time that you are using a knife.

  • Keep the surface that you are working on as well as your hands dry while using the knife to prevent slips.

  • Firmly use your dominant hand to hold whatever knife you are using.

  • Any knife strokes that you are making should go away from the direction of your body while you are cutting.

  • It is also a good idea that, while cutting, you hold the food so that your fingers are curled under. This will minimize their proximity and exposure to the knife.

Even when knives are not actively in use, it is also important to know what to do to keep yourself and others safe.

These tips include:

  • When you are done with a knife, clean it and put it away immediately.

  • Only carry one knife at a time, even if you need several. Keep the tip point towards the ground, especially while walking.

  • You should have a knife block or some sort of rack that is used to store knives. Make sure that the knives are placed in that area and that all sharp edges are pointed away from people when not in use.

  • Always make sure that the knives in the kitchen are kept sharp. Dull knives can often cause more damage and injury than knives that are kept properly sharp, due to a tendency to get more aggressive in an effort to get the same results from the inferior blade.

  • You should never toss a knife into a full sink or a bucket with other dishes and water. Those washing the dishes may not know the knife is in there and could get cut when reaching into the water.
